What's for Dinner?


Well, it finally happened! Fall has arrived; yeah!!! As I welcomed the cooler temperatures, I knew just what I had to do...make chili! YUM! Below you will find my recipe for last night's dinner. I find that it's best to make it in the late afternoon and then let it simmer for at least two hours or until dinnertime. Thankfully, there was enough leftover for tonight's dinner as well; wahoo! Enjoy!

Easy Chili
Non-stick cooking spray
1/4 cup onion, chopped (I used a vidalia onion)
1.5 lbs ground beef
29 oz tomato sauce
1.25oz mild chili seasoning packet (I love McCormick)
16 oz chili beans in mild sauce, undrained
16 oz light red kidney beans, drained (use whatever beans you prefer)
2 Tbl brown sugar

Spray a large sauce pan with cooking spray. Add onion and cook about 3 minutes or until chopped onion is translucent.
Add ground beef; breaking it up and cook until all pink is gone. (I love my mix 'n chop from Pampered Chef; it makes this part so easy!)
Then add sauce, seasoning, beans and sugar. Mix well.
Bring to a boil. Then reduce heat to low-medium and cover.
Stir occasionally until ready to serve.

I made up a quick batch of cheddar garlic biscuits to accompany my chili.

1 cup baking mix
1/4 cup milk
1/2 cup sharp shredded cheese

Mix all ingredients. Drop by spoonfuls onto greased baking sheet. Bake at 450 degrees for 8-10 minutes. Melt 1 Tbl of butter and add garlic powder (I love Mrs. Dash Italian Basil blend!). Brush seasoned butter over biscuits when they're fully baked and enjoy!
